Mudassar Hussain, a PhD student at the Laboratory of Biochemistry and Technology, Institute of Horticulture, LAMMC, recently participated in the 4th FLAVOURsome Workshop: Artificial Intelligence for Flavour Innovation, held at the Leibniz Institute for Food Systems Biology at the Technical University of Munich (LSB), Freising, Germany, 25–26 June 2026. The workshop was supported by The European Cooperation in Science and Technology (COST) and brought together researchers from across Europe to explore the growing role of artificial intelligence in flavour science and food research.
The two-day workshop combined keynote lectures, expert presentations, and hands-on computational training, covering three major themes: Receptor Modelling, Chemoinformatics, and Food Informatics. Participants explored AI-driven protein structure prediction, molecular docking, machine learning for flavour prediction, and the integration of chemical, biological, and sensory datasets. Practical sessions included developing predictive models of flavour activity and applying computational tools to analyse food compounds.
The workshop also featured a plenary lecture on the application of artificial intelligence in food safety, highlighting both its opportunities and challenges for future food systems. These discussions demonstrated how AI is becoming an increasingly valuable tool for understanding molecular interactions, accelerating ingredient discovery, and supporting data-driven research in food science.
Participation in this workshop provided valuable knowledge that complements the PhD research by introducing computational approaches that can support the analysis of bioactive compounds, structure–function relationships, and future applications of artificial intelligence in biomass valorisation and sustainable food innovation.
The event also offered an excellent opportunity to exchange ideas with researchers from leading European institutions, strengthening international collaboration and interdisciplinary research. Participation in this workshop reflects LAMMC’s commitment to advancing scientific excellence, fostering international partnerships, and integrating emerging digital technologies into food science research.
